this is the best apertif food i have had in years!
- 1 - 10" piece of salmon thru fish,,, top and bottom with skin on
- have the fish market debone and separate top from bottom
- place one side skin down in pyrex dish
- cover meat side of salmon with 1/2 cup of chopped fresh dill
- sprinkle 1/3 cup of sugar/coarse salt mixture ( even proportion) over dill
- place remaining side of salmon meat side down, on bottom layer, matching thin side to thicker side to create a salmon sandwich
- sprinkle remaining 1/4 cup chopped dill on top skin
- cover with foil
